Instructions

Prepare the Ingredients:

  1. Clean and prepare the seafood:
    • Wash and clean all seafood thoroughly.
    • Remove shells from the shrimp and devein them.
    • Clean the mussels and clams, discarding any that remain open.
    • Slice the squid into rings and cube the fish fillet.
  2. Prepare the vegetables:
    • Chop the onion, bell peppers, and mince the garlic.
  3. Prepare the rice:
    • Rinse the rice under cold water to remove excess starch, ensuring it cooks up light and fluffy.

Cooking the Paella:

  1. Heat the Olive Oil:
    • Heat olive oil in a large paella pan over medium heat.
  2. Sauté the Vegetables:
    • Add minced garlic and chopped onions to the pan, sautéing until fragrant.
    • Add the chopped bell peppers and cook until softened.
  3. Add the Rice and Spices:
    • Add the rice to the pan, stirring well to coat each grain with oil and spices.
    • Add the saffron strands and paprika, mixing thoroughly.
  4. Add the Chicken Stock:
    • Pour in the chicken stock, ensuring the rice is fully submerged. The saffron will give the stock a beautiful golden hue.
  5. Add the Seafood:
    • Once the stock starts to simmer, arrange the shrimp, mussels, clams, squid, and fish on top of the rice.
    • Spread the seafood evenly to ensure even cooking.
  6. Cook to Completion:
    • Allow the paella to cook over medium heat until the rice and seafood are fully cooked and the liquid is absorbed. Do not stir during this process to form a crispy bottom layer known as "socarrat."
  7. Season and Serve:
    • Once cooked, season with salt and pepper to taste.
    • Garnish with fresh parsley and lemon slices.
